We wanted to give back its letters of nobility to this beautiful grape variety that is Aligoté.
This has long been criticized and categorized as a slightly complex wine.
By taking care of him, however, he can reveal beautiful things; finesse, fruit and complexity. This is what we want to show you through this cuvée which will highlight each of the terroirs exploited.
Aging in 500l barrels gives it great complexity and length.
This wine takes its name from the two plots from which it comes :

This wine comes from a young plot, planted in the commune of Volnay, a place called « LES LURETS », with a deep and rich soil.

Alcoholic fermentation and Malolactic fermentation in barrels, 12 months aging in barrels (no new barrels) then 3 months in vats before bottling without filtration. No battonage.
This wine comes from the original plot of the estate. A plot of 5ha in one piece, facing south, in the hamlet of Auxey Duresses in Melin. Place called « LES HOZ » planted partly in Pinot Noir and partly in Chardonnay.
Chardonnays were planted at the turn of the last century, and are now around 90 years old. At that time, we were still talking about mass selection. After using clones, I decided to do a mass selection again from this plot. This project has been underway for 5 years. it has come to an end, our first massale feet are now in the ground.
Very calcareous soil, white soil and deep earth.

It is aged in 350 liter barrels (classic barrel size in Burgundy is 228) for 21 months then 4 months in vats before bottling. 15% was new.

This 30-acre parcel, around 40 years old, is located on the easternmost part of the appellation at the limit of the Chassagne appellation.

The « PERRIERES » plot is part of the « FRIONNES » in Saint Aubin.
Age of the vines: between 15 and 40 years
As the name of its locality suggests, the soil is particularly chalky.

This plot (around 30 years old) is located below the « MORGEOT » premier crus. The soil is deep and rich. No point of limestone here. My first attempts at non-battonage were made on this cuvée in order to keep as much freshness as possible.

This wine comes from a plot located in Meloisey, in the Hautes Côtes de Beaune. About 30 years old.
Shallow soil. On the surface, red earth, rather clayey then the layer of limestone is sometimes flush with the surface.

Half of the Pinot Noir was planted in the 1950s, the other half in 2000. The two plots are vinified and aged separately.

The Combes plot is located at the limit of the VOLNAY appellation. Half of the plot was planted between 1934 and 1937, the other in 2013.
The clayey limestone soil predominantly clayey.

Yeasts are unable to work beyond a certain pressure.
Alcoholic Fermentation therefore stops naturally.
