Manual harvesting, grapes are sorted on the vine and then on the truck equipped with a sorting table.
This wine is from two vineyards planted almost side by side: 50% of the plot is planted with 45 to 50-year-old vines, and 50% was planted in 2000. Both wines are vinified and aged separately and then blended for bottling.
After a first attempt in 2011 , I kept 25% of raids in both vintages. After 5 days of natural extraction by maintaining a constant temperature of 12°c, the work is mainly confined to punching down the cap and controlling temperature during the alcoholic fermentation.
Aging takes place in casks for 12 months (15% new casks) followed by 3 months in vats.
This wine was not filtered; light sediment may form in the shoulder of the bottle.
